Salad
- 4 cups of cabbage, shredded
- 1/2 cup cucumber, peeled and chopped
- 1/2 cup green onions, sliced
- 1/2 salted peanuts
- 1/2 cup red bell pepper
- Optional: make it full meal by adding 12 oz diced cooked chicken
Thai Peanut Salad Dressing
- 1/3 peanut butter
- 3 tablespoons Calivirgin Habanero Olive Oil
- 3 tablespoons Calivinegar White Wine Prosecco Vinegar
- 2 tablespoons soy sauce
- 1 teaspoon granulated sugar
- 1/2 teaspoon ginger paste or finely minced ginger
- 1/4 to 1/2 teaspoon red pepper flakes
- salt and pepper to taste
- Option: garnish with cilantro
Directions
- In a large bowl add cabbage, cucumber, green onions, peanuts, pepper and chicken ( if adding).
- In a small bowl mix remaining ingredients. Pour dressing over the salad and toss.
