Spicy Thai Peanut Salad

We made it with our Calivirgin Habanero Olive Oil

  • 4 cups of cabbage, shredded
  • 1/2 cup cucumber, peeled and chopped
  • 1/2 cup green onions, sliced
  • 1/2 salted peanuts
  • 1/2 cup red bell pepper
  • Optional: make it full meal by adding 12 oz diced cooked chicken

Thai Peanut Salad Dressing

  • 1/3 peanut butter
  • 3 tablespoons Calivirgin Habanero Olive Oil
  • 3 tablespoons Calivinegar White Wine Prosecco Vinegar
  • 2 tablespoons soy sauce
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon ginger paste or finely minced ginger
  • 1/4 to 1/2 teaspoon red pepper flakes
  • salt and pepper to taste
  • Option: garnish with cilantro


  1. In a large bowl add cabbage, cucumber, green onions, peanuts, pepper and chicken ( if adding).
  2. In a small bowl mix remaining ingredients. Pour dressing over the salad and toss.
