- 8 ounces feta cheese
- 1 jalapeño pepper
- ¼ cup Calivirgin Jalapeño Olive Oil
- 1 head of garlic, raw
- Zest and juice of half a lemon
- 1 teaspoon onion powder
- Salt and pepper, to taste
- Preheat oven to 400°F. Cut the top off of the garlic bulb, drizzle with Calivirgin Premium Extra Virgin Oil, wrap in foil, and roast on a baking sheet for 25-30 minutes. Brush a jalapeño with the same oil, add salt, and bake with the garlic until charred.
- Let cool, then halve, skin, deseed, and dice the jalapeño.
- Crumble feta in a bowl, mix in jalapeño, Calivirgin Jalapeño Olive Oil, lemon juice and zest, and onion powder.
- Squeeze the roasted garlic into the bowl, mash together with a fork or whisk. Season with salt and pepper, top with chopped scallions, and serve alongside veggies or tortilla chips!
