Spicy Lime Chicken Salad

Made with our Lavish Lime Olive Oil

Servings: 2-4   |   Prep Time: 15 min   |   Total Time: 25 min

For the chicken:

  • 1 pound of chicken breast tenderloins
  • Juice of 1 lime
  • 1 tablespoon sriracha or cholula hot sauce
  • 2 tablespoons Calivirgin Lavish Lime Olive Oil, plus more for frying
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon honey
  • 2 garlic cloves, minced

For the salad:

  • 1 head of romaine lettuce, chopped
  • 1 red bell pepper, chopped and seeded
  • 1 orange bell pepper, chopped and seeded
  • 1 yellow bell pepper, chopped and seeded
  • 1 cup of shelled, cooked edamame
  • Splash of Calivinegar White Wine Prosecco Vinegar

For the dressing:

  • 2 tablespoons mayonnaise
  • 2 tablespoons honey
  • 1 tablespoon sriracha or cholula hot sauce
  • Juice of 1 lime
  1. Whisk all the wet ingredients together for the marinade and the garlic cloves. Pour over the chicken, being sure to coat completely, and let sit for at least 15 minutes.
  2. While chicken is marinating, chop the veggies for the salad and toss together in a big bowl.
  3. Preheat a grill pan over medium heat and coat it with Calivirgin Lavish Lime Olive Oil. Add chicken and cook for 5 minutes before flipping and cooking for an additional 5 minutes, or until the chicken is done. Serve over the salad.
  4. To make the dressing, briskly whisk together all the ingredients for the dressing until combined. Serve with the salad.
